A splash of white wine, is the secret ingredient. it makes all the difference!ingredients500g prawns, peeled and3 tsp finely minced garlic3 tbsp extra virgin olive deveined, tail on cloves (4 cloves - useoil tsp cooking/koshferknife, not crusher)salttsp black pepperGARLIC BUTTER SAUCE40g unsalted butter, cut1/4 cup chardonnay or1 tbsp lemon juiceinto 1.5cm other dry white wine 1 tbsp parsley, finely chopped (garnish)method1.Place the prawns, 1 tablespoon olive oil and pepper in bowl. Gently toss then set aside for 20 minutes. 2.To sear in batches, heat 1 tablespoon olive oil in a large non-stick frying pan over high heat. Place half the prawns in the pan then sear each side for just 45 seconds, using tongs to turn. Remove prawns onto a plate, heat the last tablespoon of oil and cook the remaining prawns each side for 45 seconds. 3.Return first batch of prawns back into pan. Add garlic then stir for 30 seconds. Add wineit will sizzle and be steamy! Stir, scraping the bottom of the pan, until wine mostly evaporatesaround 30 seconds. Scatter butter across the pan, add lemon juice, then swirl butter around the pan until it melts, then toss through the parsley.4.Transfer the prawns and all the butter sauce onto a serving plate.
