b'The Great Eastern Mail DECEMBER 2, 2022 11food & winePrep Time: 20 mins serves Prep Time: 10 mins serves12 Cook Time: 35 mins 2WORLD WORLDCUP OF CUP OFFOOD FOODMediterranean Party Platter Spanish An easy and healthy MediterraneanSeafood Paellamezze platter is a sure and healthy way to please any crowd! ingredients3 cloves garlictsp sweet smoked spanish paprikaingredientsonion 2cups fish broth2 eggplants, sliced lengthwise pitted kalamata olivesred capsicumtsp saffron threads or powder(-inch or so in width) 1 x 500ml can good quality marinated1 tube of squid, cleaned 1 cup uncooked round ricesalt artichoke hearts 12 raw jumbo prawns, peeled & deveined 2 lemon wedgesolive oil greek feta cheese, cubed 8 fresh mussels, cleaned handful finely chopped parsleytraditional creamy hummus baby mozzarella cheese ballscup extra virgin olive oil sea salt & black pepperroasted red pepper hummus prosciutto di parmacup tomato sauce capsicum, any color, cored 6 fresh figs, halved (substitute: seedless homemade greek tzatziki (check recipegrapes/dried figs) methodfrom our previous edition Nov 18th) or1 tsp sumac 1.Roughly chop 3 cloves of garlic, finely diceonion, finely chopred capsicum and cut 1 quality store-bought tzatziki pita bread or your choice/rustic bread/ cleaned tube of squid into small squares. 6 campari tomatoes, quartered crackers for serving 2.Heat a paella pan on medium/high heat and add incup extra virgin olive oil, after 1 minute 6 lebanese cucumbers, sliced into spears season the olive oil with sea salt and add in the cut squid, mix with the olive oil and cook for 1 to method 2 minutes, then remove from the pan and set aside. 3.Add in the diced onion & chopped garlic into the pan, mix with the olive oil, after 1 minute add 1.Place the eggplant slices on some paper towels and sprinkle with salt. Let the eggplants sweatin the chopped capsicum and continue to mix so everything evenly sautees. After 3 minutes, add out any bitterness for 20 minutes or so. Pat dry.incup tomato sauce and season everything withtsp sweet smoked paprika, sea salt & black 2.Preheat the oven to 200C. Place the eggplant slices on a lightly oiled baking pan, drizzlepeppermix together, after 2 minutes and the tomato sauce has thickened, add the prawn back generously with olive oil. Roast for 20 minutes.into the pan, mix together and then add in 2cups fish broth. 3.Meanwhile, assemble the remaining ingredients on a large serving platter. Begin with the two4.Once the broth comes to a boil add in 1 cup round rice, give it one final mix so everything is hummus spreads on opposite sides. Place Tzatziki sauce in the cored capsicum right at theevenly distributed, after 5 to 6 minutes add in the prawns and the cleaned mussels, after another center of the platter. Assemble the remaining ingredients on the platter to your liking.5 minutes, lower the heat to low-medium and simmer until all the broth has been absorbed by 4.When the eggplant is roasted to a nice medium-brown, remove it from the oven and sprinklethe rice, then put back to a medium-high heat to achieve the socarratbetween 1 to 2 minutes with 1 teaspoon of sumac. Add the roasted eggplant to the platter. then remove the pan from the heat and cover. 5.You can cover and refrigerate this mezze party platter; take it out a few minutes before your5.After 5 minutes uncover the pan, garnish the paella with lemon wedges and finely chopped guests arrive.
